Breakfast Egg Muffin Recipe – Good Start to your Day

In our house on the weekdays, breakfast is usually coffee and some pastries or  fruit and spinach smoothie.  On weekends, we have more time and we indulge a little. Most weekends we eat fried rice and sausage (longaniza) which lasts us until the afternoon. One weekend, I tried these egg muffins and it was good and portable and there were some leftover for the weekdays. So I am definitely making it again and sharing it here with you.

Breakfast Egg Muffins are beaten eggs baked in the oven with a filling of sauteed garlic, onions, tomatoes and spinach and some bread chunks to fill it up and provide carbs. It is a complete meal by itself with helpings of protein and vegetables.

This is not entirely Filipino but the sauteing process (gisa) definitely is. You can alter it to your preferences, add meat or deli or other vegetables. You will need a muffin tin for this, maybe one that  has 9 holes.

This Breakfast Egg Muffins Recipe is easy to follow and makes portable, healthy breakfast or snacks. You can tailor it to what you want by adding meat, vegetables or toppings.

Ingredients

  • 6 pcs eggs beaten
  • 2 tbsp milk
  • 1/2 cup chopped spinach
  • 1/2 cup diced tomatoes or halved cherry tomatoes
  • 2 cloves garlic minced
  • 1/2 medium onion chopped
  • 3 slices bread
  • 1/ cup shredded cheese optional
  • 1 tbsp cooking oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  1. Preheat oven to 350 F
  2. Spray inside of muffin tin with oil.
  3. Heat pan on stove and add 1 tbsp cooking oil
  4. Saute garlic until brown. Add onions and cook until translucent.
  5. Add tomatoes and stir for 2 minutes.
  6. Add spinach and cook until wilted, about 1 minute
  7. Shred bread into pcs and put a few pieces in each muffin tin hole
  8. Divide cooked vegetables into each muffin hole on top of bread
  9. Season beaten egg with salt and pepper
  10. Pour egg mixture into muffin tin filling each hole 3/4 of the way
  11. Bake for 20 to 25 minutes
  12. Top with shredded cheese. Serve.

Variations of Healthy Breakfast Egg  Muffins:

  • use 2 eggs whites for every egg in the recipe
  • add sausage or ham or bacon bits
  • add 1/2 cup of cooked quinoa instead of bread
  • add vegetables like bell pepper. mushrooms or cooked diced potatoes

Bonus: My Healthy Breakfast Smoothie Recipe

Serves: 2 people

Ingredients:

  • 1/2 cup spinach
  • 2 cups almond milk
  • 2 tbsp peanut butter powder
  • 6 pcs strawberries
  • 1 banana
  • 2 tbsp Greek yogurt
  • 1 tbsp honey (optional)

Blend all ingredients. Serve in tall clear glasses.
