On this post I am discussing some egg recipes. The scrambled eggs recipe is one that my mom used to make for breakfast. I just added spinach to make it even healthier The egg frittata has bell pepper and portabella and is cooked on the stove and finished in the oven.

Omelette/ Frittata/ Scrambled Egg Differences:

Scrambled eggs is a dish made of cooking beaten eggs in a pan with some oil. The eggs are continuously stirred until cooked and fluffy. Sometimes, other ingredients are added like salt and pepper, cheese, milk, chives or butter.

Omelet or omelette came from France and refers to beaten eggs cooked in oil or butter but without stirring, The eggs are left to set until half cooked and then other ingredients are added and the omelet is folded over in half.

Frittata is the Italian version of omelette and the word itself roughly means ‘fried’. In the beginning, it was used to refer to fried eggs or omelette but in recent history, frittata is more used to refer to an open-faced omelette.

Ingredients

  • 5 pcs eggs
  • 2 cloves garlic minced
  • 1/2 pc small onion chopped
  • 1/2 pc tomato diced
  • 2 cups spinach 2 handfuls
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp cooking oil

Instructions

  1. Beat eggs and season with salt and black pepper
  2. Heat oil in a pan
  3. Add garlic to pan and saute until starting to brown
  4. Add onions and tomatoes and saute until cooked
  5. Add spinach and cover to wilt, about 1 min
  6. Add eggs and gently mix in with the vegetables
  7. Remove from heat when eggs are almost set

 

Variations of Scrambled Eggs:

  • add 1/4 cup of milk to the eggs
  • add diced ham or any meat deli
  • cook in butter instead of cooking oil

Basic Egg Frittata Recipe

This is a delicious and healthy egg frittata recipe to which  you can add any meats or vegetables that are in your fridge.

Ingredients

  • 4 pc eggs
  • 1/4 cup milk or broth
  • 1 pinch of herb of your choice thyme, rosemary, chives
  • 1/2 tsp salt and pepper
  • 1 pc portabella mushroom cap diced
  • 1/2 pc bell pepper diced
  • 1/2 pc small onion
  • 2 cloves garlic
  • 1/2 cup shredded cheese any kind
  • 1/2 cup handful arugula leaves
  • 2 tbsp olive oil

Instructions

  1. Beat eggs in a bowl
  2. Preheat oven 400 degrees F if you are making more than 4 eggs
  3. Add milk or broth and season with salt and pepper and herbs
  4. Heat oil in pan
  5. Add garlic and saute until slightly brown
  6. Add onions and bell pepper, cook for 1 minute
  7. Add portabella, mix and cook 1 minute more
  8. Spread mixture in the pan
  9. Add eggs all over the pan, lower heat and cook until eggs are almost set
  10. Add cheese and arugula leaves on top
  11. Remove from pan, cover and wait until eggs are completely set
  12. If you are using more than 4 eggs, your frittata will be thicker and you may need to finish in 400 degree oven for 5 to 10 minutes. Add cheese before putting into oven. Wait until eggs are almost set and cheese has melted. Add arugula after taking out.
  13. Serve by cutting into wedges like a pizza

Recipe Notes

Notes: If you are finishing the eggs in the oven, make sure to use cast iron pan or any oven safe pan.

 Variations of Egg Frittata

  • You can use any vegetable you have like potatoes, tomatoes, spinach, asparagus
  • You can use any left over meat or deli like ham, turkey, bacon, diced chicken
  • Use any shredded cheese that you have on hand
  • You can saute vegetables and meat in a pan, transfer to a baking dish, add eggs and cook in the oven
  • Make it your own and add any spices or meat or vegetables you want, just make sure the meat is cooked and the vegetables are tender before cooking with the eggs

 

Simple Omelette Recipe

  • 2 eggs
  • 2 tbsp milk
  • pinch of salt and ground pepper to taste
  • 1 tbsp cooking oil or butter
  • 1/2 cup omelet filling like diced ham, spinach, bacon, mushrooms

Directions:

  1. Beat eggs in a bowl. Season with salt and pepper and add milk. Add herbs if preferred.
  2. Heat 1 tbsp oil or butter in Medium High setting in pan. Use pan with sloping sides
  3. Cook filling. Saute diced meat and/or vegetables in 1 tbsp oil until tender
  4. Transfer filling to a bowl. Add 1 tbsp oil to pan
  5. Pour egg mixture into pan. Egg should start setting at the edges
  6. Push mixture into center of pan, tilting pan so that uncooked eggs will have contact with the pan
  7. When eggs are almost set, add filling to one half of the pan
  8. Fold omelet in half with the turner making sure to cover the filling
  9. Flip omelette quickly to cook the other side briefly
  10. Serve hot onto a plate

Eggs

Eggs are very high in protein and are regarded as a complete source of protein as they have all 9 essential amino acids. The egg whites has most of the protein and vitamin B2. Some brands of eggs now contain omega-3 fatty acids/

Even though eggs cause mild increases in Total and LDL cholesterol levels, this is not the whole story as eggs also raise good cholesterol (HDL).

In any case, you can replace 1 whole egg with 2 egg whites in any of the recipes above if you want,

Spinach

Has a lot of dietary fiber, which aids in digestion, prevents constipation, maintains low blood sugar, and curbs overeating. Has phytonutrients for cancer fighting properties. Has anti-inflammatory and antioxidant properties that combat osteoporosis, atherosclerosis and high blood pressure. Good for vision, immunity and can prevent acne and wrinkles. Has Vitamin K that fights cardiovascular disease and stroke.

Garlic and Onions

Garlic c and onions are part of the Alum family. They have a lot of medicinal and healthy properties. They are low in calories but are rich in Manganese, Vitamin C and Vitamin B6. They can combat high blood pressure, high cholesterol, motion sickness, can protect against flu and colds and against Alzheimer’s disease and dementia,

 

Bell Pepper

Is high in Vitamin A and C and has low calorie density and is very filling. Improves immunity and helps the skin. The red variety has the highest amount of Vitamin C. Has antioxidant and anti-inflammatory properties. Capsacin in bell pepper reduces bad cholesterol, controls diabetes and gives relief from pain.

The sulfur content in bell peppers protects you against certain types of cancers. Vitamin E keeps skin and hair looking good. Lutein protects our eyes from cataracts and macular degeneration.

Portabella

To summarize, portabella is low carb and good for keto diets. It is cholesterol free, fat free, gluten free and has low sodium, It is very filling and has a meaty flavor so is a good substitute for beef.
